Wrighteous Organics, Schoharie NY
The Man behind much of our traditionally raised beef is Martin Tessarzik. Beef began as an afterthought for Martin — Wrighteous Organics’ primary business has historically been raising organic small grains and other organic crops on the farm that his parents bought back in 1962. He originally brought in a few steer to eat the broken hay bales and leftover grains that couldn’t be sold. But as it turns out, Martin was a natural at raising high quality beef and quicky fell in love with, and expanded, the operation. He keeps about 80 head of cattle his land at all times. Beginning this summer, Martin will also be custom raising heritage breed pigs for Dickson’s Farmstand.
Production Methods
Martin has what they call a ‘stocker’ herd; he buys animals at auction at about 1 year of age, and then feeds them on his certified organic feed until they go to slaughter at about 24 months. Wrighteous Organics primarily uses Angus stock, with some other breeds mixed in occasionally.

Dear Martin
My husband Bill and I just devoured your ribeye steak (on the bone).
I grilled it on our barbeque and made sure to cook it perfectly Medium rare. More towards the rare. Freshly minced garlic, coarse sea salt and freshly ground pepper corns. It was just the best steak I have ever eaten. I bought it in the Chelsea Market at Dickenson’s Worth every penny!!!!! Thank you for breeding quality meat and making a difference on this planet
Regards
